Flour Less Chocolate Cake

If you're looking for a melt in your mouth, ooey gooey, easy chocolate cake recipe then you have come to the right place. This cake is so good! I found this recipe awhile back in the Parade Magazine and decided this is the dessert I would make for my husband on Valentine's Day. It was super easy, so delicious and GF! I am ashamed to admit but it was so good that we never ended up giving any to our son who eats GF. Why? Well, we ate it all. Don't judge until you try it! :)

Flourless Chocolate Cake

7 oz. semisweet chocolate
3/4 cup butter
1 cup sugar, divided
4 eggs, separated

  1. Preheat oven to 300*F. Melt chocolate and butter in a double boiler. Stir together half the sugar and four yolks; add to melted chocolate concoction.
  2. Using and electric mixer, beat the egg whites; slowly add remaining 1/2 cup sugar until stiff peaks form. Fold mixture into chocolate. Pour into a greased 9-inch cake pan.
  3. Bake 40 minutes, or until a toothpick inserted in center comes out with just a few crumbs on it. Cool 30 minutes before removing from pan. Dust with powdered sugar.
*Note: If you don't have a double boiler you can just do like I did and use a medium size cooking pot and glass bowl that will fit snugly on top of the pot. Fill the pot with a decent amount of water and place glass bowl on top. Set stovetop burner to med-high. The water creates a nice steam to melt the chocolate and butter without burning it.
Also, this is really good the next day after putting in the refrigerator! Bon Appetit!
